Old vines - 25 years for Pinot Gris, 30 for Riesling and Gewurztraminer, and 35 for Sylvaner according to European conventions - produce less than younger vines. As a result, yields are lower and grapes more concentrated. The resulting wines are denser and more suitable for aging.
