What is “vin nouveau”?
New wine is, above all, a tradition in Alsace! This fleeting wine makes its debut a few days after the harvest begins.
New wine is somewhere between grape juice and wine, and goes through several stages of development: at first sweet (Nejer Siesser), it contains no alcohol or very little, and is consumed like grape juice. After a certain period, the yeasts become active, and fermentation begins, with the juice becoming cloudy and fine bubbles appearing (Nejer Risser).
Enjoyed as an afternoon snack, it’s also a favorite pairing with walnuts and smoked bacon.
